Ingredients
  

  • Plain Greek yogurt full-fat, unsweetened
  • Eggs
  • Baking powder
  • Salt
  • Apple cider vinegar or lemon juice
  • Optional: butter or olive oil for greasing the pan

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or oil, or line it with parchment paper.
  2. In a large mixing bowl, add the Greek yogurt and eggs. Whisk thoroughly until the mixture becomes smooth and uniform. Take your time here to avoid lumps.
  3. Add the salt and baking powder to the bowl. Mix gently but thoroughly to ensure even distribution.
  4. Pour in the apple cider vinegar or lemon juice and stir again. The batter should be thick but pourable.
  5. Transfer the batter into the prepared loaf pan. Use a spatula to smooth the top evenly.
  6. Tap the pan gently on the counter to release any trapped air bubbles.
  7. Place the pan in the center rack of the oven and bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Once baked, remove the bread from the oven and allow it to cool in the pan for 10 minutes.
  9. Carefully remove the loaf and transfer it to a cooling rack. Let it cool completely before slicing for the best texture.
