Ingredients
  

  • 1 lb 450g ground turkey
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 2 medium carrots sliced
  • 1 zucchini chopped
  • 1 yellow squash chopped
  • 1 red bell pepper chopped
  • 1 cup green beans trimmed and cut
  • 1 can 14–15 oz diced tomatoes (with juices)
  • 4 cups low-sodium chicken or vegetable broth
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon paprika optional
  • Fresh parsley or herbs for garnish

Method
 

Step 1: Heat the Pot
  1. Place a large soup pot over medium heat. Add olive oil and allow it to warm gently.
Step 2: Sauté Aromatics
  1. Add diced onion. Cook for 3–4 minutes until softened and translucent.
  2. Add minced garlic. Stir for about 30 seconds until fragrant.
Step 3: Cook Ground Turkey
  1. Add ground turkey to the pot. Break apart using a spoon.
  2. Cook until fully browned and no longer pink. Stir occasionally for even cooking.
  3. Season lightly with salt and pepper.
Step 4: Add Vegetables
  1. Add carrots, zucchini, squash, bell pepper, and green beans.
  2. Stir well to combine with turkey and aromatics.
  3. Cook for 2–3 minutes to begin softening.
Step 5: Add Tomatoes & Broth
  1. Pour in diced tomatoes with juices.
  2. Add broth and stir thoroughly.
Step 6: Season the Soup
  1. Add oregano, basil, paprika (if using), salt, and pepper.
  2. Mix evenly.
Step 7: Simmer
  1. Bring soup to a gentle boil, then reduce heat to low.
  2. Cover partially and simmer for 20–25 minutes.
  3. Vegetables should become tender while flavors meld.
Step 8: Taste & Adjust
  1. Taste broth and adjust seasoning as needed.
Step 9: Serve
  1. Ladle into bowls and garnish with fresh herbs.
