Begin by preparing all vegetables. Wash lettuce leaves thoroughly and pat dry with paper towels. Slice cucumbers and bell peppers into thin strips.
Lay turkey slices flat on a clean cutting board or plate. If the slices are large, slightly overlap two pieces to create a wider base.
Place a slice of cheese on top of each turkey slice, aligning it so it covers most of the surface without extending too far over the edges.
If using cream cheese, spread a thin layer evenly over the cheese or directly onto the turkey.
Add lettuce leaves, cucumber slices, and bell pepper strips along one edge of the turkey slice.
Season lightly with black pepper and optional herbs or spices. Add mustard or mayonnaise if desired.
Carefully roll the turkey slice tightly around the filling, starting from the edge with the vegetables and rolling toward the opposite side.
Press gently to secure the roll-up. If needed, use a toothpick to hold it together.
Repeat the process until all ingredients are used.
Arrange the turkey roll-ups on a serving plate. Slice in half for smaller portions if desired.
