Ingredients

  • 1 cup plain Greek yogurt full-fat or low-fat
  • ½ cup sugar-free granulated sweetener
  • 2 large eggs
  • cup unsweetened cocoa powder
  • ½ cup almond flour or oat flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • cup sugar-free chocolate chips optional

Equipment

  • Mixing bowls (medium and large)
  • Whisk
  • Silicone spatula
  • Measuring cups
  • Measuring spoons
  • 8x8-inch baking pan
  • Parchment paper
  • Cooling rack

Method

Preheat the oven
  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
Mix wet ingredients
  1. In a large mixing bowl, whisk together the Greek yogurt and sugar-free sweetener until smooth and creamy. Add the eggs one at a time, whisking well after each addition. Stir in vanilla extract.
Combine dry ingredients
  1. In a separate bowl, whisk together cocoa powder, almond flour (or oat flour), baking powder, and salt until evenly mixed.
Combine wet and dry mixtures
  1. Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula until fully incorporated. Avoid overmixing.
Add chocolate chips
  1. Fold in sugar-free chocolate chips if using.
Bake
  1. Pour the batter into the prepared pan and smooth the top. Bake for 22–28 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
Cool completely
  1. Remove from the oven and let the brownies cool completely in the pan before slicing. This step is essential for the best texture.
