Ingredients
  

  • Fresh cucumbers
  • Sweet corn kernels fresh, canned, or frozen
  • Red onion
  • Mayonnaise
  • Greek yogurt or sour cream
  • Lime juice
  • Garlic powder
  • Chili powder or paprika
  • Salt
  • Black pepper
  • Fresh herbs cilantro or parsley
  • Optional: cotija or feta cheese

  • Sharp knife
  • Mixing bowl

  • Strainer (if using canned corn)
  • Refrigerator

Method
 

Prepare Cucumbers
  1. Wash, dry, and chop cucumbers into bite-sized chunks.
Prepare Corn
  1. Cook fresh corn or prepare canned/frozen corn as needed.
Dice Onion
  1. Finely chop red onion.
Make Dressing
  1. Mix mayonnaise, yogurt/sour cream, lime juice, and spices.
Combine Ingredients
  1. Toss cucumbers, corn, onion with dressing.
Add Herbs & Cheese
  1. Fold gently.
Chill
  1. Refrigerate 15–30 minutes.
