Preheat your oven to 375°F (190°C). Lightly grease an oven-safe baking dish or individual ramekins with olive oil.
In a mixing bowl, combine cherry tomatoes, onion, garlic, red bell pepper, spinach, dried oregano, dried thyme, red chili flakes, black pepper, and a drizzle of olive oil. Toss gently to coat everything evenly.
Spread the vegetable mixture evenly in the prepared baking dish. Crumble the feta cheese over the top, distributing it across the vegetables.
Place the dish in the oven and bake for 12–15 minutes, until the vegetables soften and the feta begins to melt and turn lightly golden.
Remove the dish from the oven and carefully create small wells in the mixture using a spoon. Crack one egg into each well.
Return the dish to the oven and bake for another 8–12 minutes, depending on how runny you prefer your yolks.
Once the egg whites are set and yolks are cooked to your liking, remove from the oven.
Garnish with fresh herbs and an extra drizzle of olive oil if desired. Serve immediately.
