Ingredients
  

  • 1 lb 450 g ground chicken
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • cup sugar-free firecracker sauce or low-carb chili sauce
  • 2 tablespoons sugar-free ketchup
  • 1 tablespoon soy sauce or coconut aminos
  • 1 tablespoon rice vinegar
  • 1 –2 teaspoons chili flakes adjust to taste
  • 1 teaspoon sriracha or hot sauce optional
  • ½ teaspoon black pepper
  • ¼ teaspoon salt adjust as needed
  • 1 teaspoon cornstarch substitute or xanthan gum optional, for thickening
  • 2 green onions sliced
  • Sesame seeds for garnish optional

Equipment

  • Large nonstick skillet or sauté pan
  • Wooden spoon or spatula
  • Small mixing bowl
  • Measuring cups and spoons

Method
 

Prepare the Sauce
  1. In a small bowl, whisk together the firecracker sauce, sugar-free ketchup, soy sauce (or coconut aminos), rice vinegar, chili flakes, and hot sauce. Set aside.
Heat the Pan
  1. Place a large skillet over medium heat. Add olive oil and sesame oil, allowing them to warm for about 30 seconds.
Sauté Aromatics
  1. Add minced garlic and grated ginger to the pan. Sauté for 20–30 seconds until fragrant, being careful not to burn them.
Cook the Ground Chicken
  1. Add the ground chicken to the skillet. Break it apart with a spatula and cook for 6–8 minutes until fully cooked and lightly browned.
Season the Chicken
  1. Sprinkle in black pepper and salt. Stir well to evenly distribute seasoning.
Add the Sauce
  1. Pour the prepared firecracker sauce over the chicken. Stir thoroughly to coat every piece.
Simmer and Thicken
  1. Reduce heat to low and let the mixture simmer for 3–5 minutes. If you want a thicker sauce, sprinkle in a pinch of xanthan gum while stirring continuously.
Finish and Garnish
  1. Remove from heat. Stir in sliced green onions and garnish with sesame seeds if desired.
