Ingredients
  

  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon red chili flakes
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper adjust to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt optional

Method
 

Preheat the Oven
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Cheese Mixture
  1. In a mixing bowl, combine shredded cheddar and mozzarella cheese. Add red chili flakes, smoked paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt if using. Mix thoroughly to evenly distribute the spices.
Portion the Cheese
  1. Using a spoon or cookie scoop, place small mounds of cheese mixture onto the prepared baking sheet, leaving space between each mound.
Shape the Crisps
  1. Gently flatten each mound slightly with the back of a spoon to ensure even cooking.
Bake the Cheese Crisps
  1. Bake in the preheated oven for 7–10 minutes, or until the edges are golden brown and bubbly.
Cool for Crispiness
  1. Remove from the oven and allow the crisps to cool on the baking sheet for 5 minutes before transferring to a cooling rack. They will continue to crisp as they cool.
Serve or Store
  1. Once fully cooled, serve immediately or store for later.
