Step 1: Brown the Sausage
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the sausage links or slices.
- Cook until browned on all sides—about 5–7 minutes.
- Remove sausage from the skillet and set aside.
Step 2: Sauté the Vegetables
- Add the remaining 1 tablespoon of olive oil to the skillet.
- Add sliced onions and cook until they begin to soften.
- Add bell peppers and cook for 5–6 minutes, stirring frequently.
- Add minced garlic and sauté for 30 seconds until fragrant.
Step 3: Add Tomatoes and Seasonings
- Add diced tomatoes and tomato paste.
- Stir in Italian seasoning, paprika, salt, black pepper, and optional red pepper flakes.
- Mix well to combine the flavors.
Step 4: Simmer the Skillet
- Return the browned sausage to the skillet.
- Stir everything together.
- Reduce heat to low and cover.
- Allow to simmer for 10–12 minutes so the flavors meld.
Step 5: Garnish and Serve
- Remove lid and stir the skillet.
- Garnish with freshly chopped parsley.
- Serve hot.
