Ingredients
  

  • 1 lb Italian sausage links or pre-sliced
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 cup canned diced tomatoes no sugar added
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes optional for heat
  • Fresh parsley for garnish

Equipment

  • 1 Large skillet or cast-iron pan
  • 1 Sharp knife
  • 1 Cutting board
  • 1 Wooden spoon or silicone spatula
  • 1 Measuring spoons
  • 1 Measuring cup
  • 1 Serving plates or bowls

Method
 

Step 1: Brown the Sausage
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the sausage links or slices.
  3. Cook until browned on all sides—about 5–7 minutes.
  4. Remove sausage from the skillet and set aside.
Step 2: Sauté the Vegetables
  1. Add the remaining 1 tablespoon of olive oil to the skillet.
  2. Add sliced onions and cook until they begin to soften.
  3. Add bell peppers and cook for 5–6 minutes, stirring frequently.
  4. Add minced garlic and sauté for 30 seconds until fragrant.
Step 3: Add Tomatoes and Seasonings
  1. Add diced tomatoes and tomato paste.
  2. Stir in Italian seasoning, paprika, salt, black pepper, and optional red pepper flakes.
  3. Mix well to combine the flavors.
Step 4: Simmer the Skillet
  1. Return the browned sausage to the skillet.
  2. Stir everything together.
  3. Reduce heat to low and cover.
  4. Allow to simmer for 10–12 minutes so the flavors meld.
Step 5: Garnish and Serve
  1. Remove lid and stir the skillet.
  2. Garnish with freshly chopped parsley.
  3. Serve hot.
