Ingredients
  

  • 2 cans salmon 14.75 oz each, drained and flaked
  • 2 large eggs
  • ½ cup almond flour
  • 3 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • ¼ cup chopped green onion
  • ¼ cup chopped fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • 2 tablespoons olive oil or avocado oil for frying
Optional:
  • ¼ teaspoon red pepper flakes
  • Zest of one lemon
  • Additional herbs such as dill or cilantro

Method
 

Step 1: Prepare the Salmon Mixture
  1. Drain the canned salmon thoroughly.
  2. Transfer salmon to a mixing bowl and flake with a fork.
  3. If bones are present, mash them into the mixture—they are soft and nutritious.
Step 2: Add the Binding Ingredients
  1. Add eggs, mayonnaise, and Dijon mustard.
  2. Mix until smooth and evenly combined.
Step 3: Add Dry Ingredients and Seasonings
  1. Add almond flour, garlic, green onion, parsley, salt, pepper, paprika, and optional red pepper flakes.
  2. Mix until a cohesive dough-like mixture forms.
  3. If the mixture feels too wet, add 1–2 tablespoons of almond flour.
  4. If too dry, add a small spoon of mayo.
Step 4: Shape the Patties
  1. Divide the mixture into 8 equal portions.
  2. Form into round, flat patties with your hands.
  3. Place them on a plate or parchment paper until ready to cook.
Step 5: Cook the Salmon Patties
  1. Heat olive oil in a large skillet over medium heat.
  2. Place patties in the skillet without overcrowding.
  3. Cook for 4–5 minutes per side or until golden brown and crispy.
  4. Flip carefully using a spatula.
  5. Transfer cooked patties to a paper towel-lined plate to remove excess oil.
