Ingredients
  

  • 8 large slices keto-friendly deli turkey chicken, or ham
  • ½ cup full-fat cream cheese softened
  • ¼ cup keto basil pesto homemade or store-bought
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 1 tablespoon olive oil optional, for pesto enhancement
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
Optional fillings:
  • Fresh spinach leaves
  • Sun-dried tomatoes small amount, keto-friendly
  • Olives finely chopped
  • Red pepper flakes

  • 1 Cutting board
  • 1 Sharp knife
  • 1 Small mixing bowl
  • 1 Spatula or spoon
  • 1 Plastic wrap or parchment paper
  • 1 Measuring cups and spoons

Method
 

Prepare the filling
  1. In a small bowl, mix softened cream cheese, pesto, mozzarella, parmesan, black pepper, and garlic powder until smooth and well combined.
Lay out deli slices
  1. Place deli meat slices flat on a cutting board, slightly overlapping if needed, forming a rectangle.
Spread the mixture
  1. Evenly spread the pesto cream cheese mixture over the deli slices, leaving a small border at the edges.
Add optional fillings
  1. Sprinkle spinach, olives, or sun-dried tomatoes evenly if using.
Roll tightly
  1. Starting from one end, carefully roll the deli meat into a tight log using parchment paper to help maintain shape.
Chill to set
  1. Wrap the roll tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
Slice into pinwheels
  1. Remove from fridge, unwrap, and slice into 1-inch pinwheels using a sharp knife.
Serve or store
  1. Arrange on a platter or store in an airtight container.
