Ingredients

  • Cream cheese full-fat, softened
  • Unsweetened cocoa powder
  • Instant espresso powder or finely ground coffee
  • Powdered keto sweetener erythritol, monk fruit blend, or allulose
  • Unsalted butter softened
  • Vanilla extract
  • Almond flour
  • Heavy cream optional, for texture adjustment
  • Sugar-free dark chocolate optional, for coating
  • Coconut oil optional, for chocolate coating
  • Cocoa powder shredded coconut, or chopped nuts (optional coatings)
  • Sea salt small pinch

Equipment

  • Medium mixing bowl
  • Hand mixer or whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper
  • Small cookie scoop or spoon
  • Refrigerator or freezer

Method

Step 1: Soften the Ingredients
  1. Allow cream cheese and butter to sit at room temperature for about 30 minutes. This ensures a smooth, lump-free mixture.
Step 2: Mix the Base
  1. In a medium mixing bowl, combine softened cream cheese and butter. Beat with a hand mixer or whisk until smooth and creamy.
Step 3: Add Flavorings
  1. Add powdered sweetener, cocoa powder, espresso powder, vanilla extract, almond flour, and sea salt. Mix until fully combined and smooth.
Step 4: Adjust Texture
  1. If the mixture is too thick, add heavy cream one teaspoon at a time. If it’s too soft, add a little more almond flour.
Step 5: Chill the Mixture
  1. Refrigerate the mixture for 20–30 minutes. This makes it easier to roll into truffles.
Step 6: Form the Truffles
  1. Line a baking sheet with parchment paper. Scoop small portions of the mixture and roll into bite-sized balls.
Step 7: Coat (Optional)
  1. Roll truffles in cocoa powder, coconut, or nuts. For chocolate coating, dip truffles into melted sugar-free chocolate mixed with coconut oil.
Step 8: Final Chill
  1. Return truffles to the refrigerator for at least 30 minutes to fully set.
