Step 1: Soften the Ingredients
- Allow cream cheese and butter to sit at room temperature for about 30 minutes. This ensures a smooth, lump-free mixture.
Step 2: Mix the Base
- In a medium mixing bowl, combine softened cream cheese and butter. Beat with a hand mixer or whisk until smooth and creamy.
Step 3: Add Flavorings
- Add powdered sweetener, cocoa powder, espresso powder, vanilla extract, almond flour, and sea salt. Mix until fully combined and smooth.
Step 4: Adjust Texture
- If the mixture is too thick, add heavy cream one teaspoon at a time. If it’s too soft, add a little more almond flour.
Step 5: Chill the Mixture
- Refrigerate the mixture for 20–30 minutes. This makes it easier to roll into truffles.
Step 6: Form the Truffles
- Line a baking sheet with parchment paper. Scoop small portions of the mixture and roll into bite-sized balls.
Step 7: Coat (Optional)
- Roll truffles in cocoa powder, coconut, or nuts. For chocolate coating, dip truffles into melted sugar-free chocolate mixed with coconut oil.
Step 8: Final Chill
- Return truffles to the refrigerator for at least 30 minutes to fully set.
