Ingredients
  

For the Keto Meatloaf
  • pounds ground beef 80/20 recommended
  • 2 large eggs
  • ½ cup almond flour
  • ½ cup grated Parmesan cheese
  • ½ small onion finely diced
  • 2 cloves garlic minced
  • 2 tablespoons sugar-free ketchup
  • 1 tablespoon Worcestershire sauce sugar-free
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
For the Cauliflower Mash
  • 1 large head cauliflower cut into florets
  • 3 tablespoons butter
  • ¼ cup heavy cream
  • ½ cup cream cheese
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped chives or parsley for garnish

Method
 

Step 1: Prepare the Oven
  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or baking dish with olive oil.
Step 2: Make the Meatloaf Mixture
  1. In a large mixing bowl, combine ground beef, eggs, almond flour, Parmesan cheese, diced onion, garlic, sugar-free ketchup, Worcestershire sauce, salt, pepper, smoked paprika, and Italian seasoning.
  2. Mix gently with clean hands or a spatula until just combined. Avoid overmixing, as this can make the meatloaf dense.
Step 3: Shape and Bake
  1. Transfer the mixture into the prepared loaf pan and gently press it into shape. Optionally, spread a thin layer of sugar-free ketchup on top.
  2. Cover loosely with foil and bake for 35 minutes. Remove foil and bake for an additional 15–20 minutes until the internal temperature reaches 160°F (71°C).
Step 4: Rest the Meatloaf
  1. Remove from the oven and let rest for 10 minutes. This helps the juices redistribute and makes slicing easier.
Step 5: Cook the Cauliflower
  1. While the meatloaf rests, bring a large pot of salted water to a boil. Add cauliflower florets and cook for 10–12 minutes until fork-tender.
  2. Drain thoroughly using a colander. Excess water can make the mash watery, so let the cauliflower steam-dry for a minute.
Step 6: Mash the Cauliflower
  1. Transfer cauliflower to a food processor. Add butter, heavy cream, cream cheese, garlic powder, salt, and pepper.
  2. Blend until smooth and creamy. Taste and adjust seasoning as needed.
