Step 1: Prepare the Meatball Mixture
- In a large mixing bowl, combine ground beef, almond flour, Parmesan cheese, egg, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes.
- Mix gently with a wooden spoon or your hands until just combined. Overmixing can make meatballs dense.
Step 2: Shape the Meatballs
- Roll the mixture into 1.5-inch meatballs, placing them on a parchment-lined baking sheet or plate.
- You should get about 12–14 meatballs depending on size.
Step 3: Cook the Meatballs
Oven Method:
- Preheat the oven to 400°F (200°C).
- Place meatballs on a parchment-lined baking sheet and bake for 18–20 minutes until cooked through and slightly browned.
- Skillet Method (Optional):
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Cook meatballs in batches, turning occasionally, for 10–12 minutes until browned on all sides and cooked through.
Step 4: Prepare the Tomato Sauce
- In a medium saucepan, heat olive oil over medium heat.
- Add chopped onion and sauté for 3–4 minutes until translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Pour in the tomato puree and stir in oregano, basil, salt, black pepper, and red pepper flakes.
- Reduce heat to low and simmer for 10–15 minutes. If using xanthan gum, whisk it in slowly to thicken the sauce.
Step 5: Combine Meatballs and Sauce
- Gently add cooked meatballs into the simmering tomato sauce.
- Allow them to simmer together for 5–10 minutes so the meatballs absorb the sauce flavors.
