  • 1 Microplane or zester
  • 1 Measuring cups and spoons
  • 1 Parchment paper
  • 1 Knife
  • 1 Cooling rack

Method

Prepare the Crust
  1. Preheat your oven to 350°F (175°C).
  2. Line an 8x8-inch baking pan with parchment paper, leaving overhang for easy removal.
  3. In a mixing bowl, combine almond flour, powdered sweetener, melted butter, vanilla extract, and a pinch of salt.
  4. Mix until the dough forms a wet, sandy texture.
  5. Press the mixture evenly into the bottom of the baking pan using your hands or a flat spatula.
  6. Bake the crust for 10–12 minutes, or until slightly golden at the edges.
  7. Remove from the oven and cool while preparing the filling.
Make the Lemon Filling
  1. In a clean bowl, whisk the eggs thoroughly until smooth.
  2. Add powdered sweetener, fresh lemon juice, lemon zest, coconut flour, and xanthan gum (if using).
  3. Whisk until the mixture is well combined and no lumps remain.
  4. Pour the lemon filling over the pre-baked crust.
Bake the Lemon Bars
  1. Return the pan to the oven and bake for 20–25 minutes, or until the center is set but still slightly jiggly.
  2. Remove from the oven and allow the bars to cool completely in the pan.
  3. Once cooled, transfer to the refrigerator for at least 2 hours to firm up.
Slice and Serve
  1. Lift the bars out of the pan using parchment paper overhang.
  2. Dust lightly with powdered sweetener.
  3. Slice into squares or rectangles using a sharp knife.
