Boil the Eggs
- Place eggs in a saucepan and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 10–12 minutes.
Cool and Peel
- Transfer eggs to an ice bath for 5 minutes. Peel and rinse under cool water.
Prepare Egg Whites
- Slice eggs in half lengthwise. Remove yolks and place them in a mixing bowl. Arrange egg whites on a serving platter.
Make the Guacamole Filling
- Add avocados to the bowl with egg yolks. Mash until smooth.
Add Flavorings
- Stir in mayonnaise, lime juice, garlic, red onion, cilantro, cumin, paprika, salt, and black pepper.
Adjust Seasoning
- Taste and adjust seasoning as needed.
Fill the Eggs
- Spoon or pipe the guacamole mixture into the egg whites.
Garnish and Serve
- Garnish with paprika, chili flakes, or cilantro and serve immediately.
