Step 1: Prepare the Cucumbers
- Wash the cucumbers thoroughly and pat them dry. Slice them into even rounds about ¼-inch thick. For sandwich-style bites, you will need an even number of slices.
- Lay the cucumber slices on paper towels and lightly sprinkle with salt. Let them sit for 5–10 minutes to draw out excess moisture. Pat dry with paper towels. This step prevents watery sandwich bites.
Step 2: Make the Cream Cheese Filling
- In a mixing bowl, add softened cream cheese and mayonnaise. Mix until smooth and creamy.
- Add chopped dill, chives, lemon juice, garlic powder, salt, and black pepper. Stir until fully combined and evenly distributed.
- Taste the mixture and adjust seasoning as needed.
Step 3: Assemble the Sandwich Bites
- Place cucumber slices flat on a cutting board. Spoon or pipe a generous amount of cream cheese mixture onto half of the slices.
- If using optional fillings like smoked salmon or turkey, place a small piece on top of the cream cheese layer.
- Top with another cucumber slice to form a sandwich. Gently press down to secure.
Step 4: Garnish and Finish
- Sprinkle with everything bagel seasoning, paprika, or fresh herbs if desired. Arrange on a serving platter.
