Ingredients
  

  • 1 cup unsweetened full-fat coconut milk
  • ¼ cup coconut cream
  • 1 tablespoon MCT oil or coconut oil
  • 1 tablespoon unsweetened shredded coconut
  • ½ teaspoon vanilla extract
  • 1 –2 tablespoons powdered erythritol or monk fruit sweetener
  • ½ cup ice cubes
  • Pinch of salt
Optional add-ins:
  • 1 tablespoon chia seeds
  • 1 scoop keto-friendly vanilla protein powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon coconut extract

Equipment

  • 1 High-speed blender
  • 1 Measuring cups
  • 1 Measuring spoons
  • 1 Glass for serving

Method
 

Step 1: Prepare Ingredients
  1. Ensure all ingredients are measured and ready. If using coconut cream from a can, chill the can beforehand so the cream separates easily.
Step 2: Add Ingredients to Blender
  1. Add coconut milk, coconut cream, MCT oil or coconut oil, shredded coconut, vanilla extract, sweetener, ice cubes, and salt to the blender.
Step 3: Blend Until Smooth
  1. Blend on high speed for 30–60 seconds, or until the smoothie is completely smooth and creamy. Scrape down the sides if needed.
Step 4: Adjust Consistency and Taste
  1. Taste the smoothie. Add more sweetener if needed, or a splash of coconut milk if it’s too thick. Blend again briefly.
Step 5: Serve Immediately
  1. Pour into a glass and enjoy fresh for the best flavor and texture.
