Prepare the cream cheese filling
- In a small bowl, combine softened cream cheese, shredded cheese (if using), chives, garlic powder, onion powder, and black pepper. Mix until smooth and evenly blended.
Lay out the deli meat
- Place deli meat slices flat on a cutting board or parchment paper. If slices are small, slightly overlap them to create a wider rolling surface.
Spread the filling
- Evenly spread a thin layer of the cream cheese mixture over each slice of deli meat, leaving a small border around the edges.
Add optional fillings
- Place pickles, jalapeños, spinach, or bacon bits in a single line near one edge of the slice.
Roll tightly
- Starting from the edge with the fillings, gently roll the deli meat into a tight log. Use parchment paper to help keep the roll tight.
Chill for structure
- Wrap each roll in plastic wrap and refrigerate for 20–30 minutes to firm up.
Slice and serve
- Remove from fridge, unwrap, and slice into bite-sized roll-ups or serve whole.
