Ingredients

  • 1 tablespoon powdered erythritol or monk fruit sweetener

  • 1 tablespoon melted butter or coconut oil
  • 1 tablespoon unsweetened almond milk
  • ½ teaspoon vanilla extract
For the Cinnamon Swirl:
  • 1 tablespoon melted butter
  • 1 tablespoon powdered erythritol
  • ½ teaspoon ground cinnamon
Optional Keto Glaze:
  • 2 tablespoons powdered erythritol
  • 1 tablespoon heavy cream or coconut cream
  • ¼ teaspoon vanilla extract

Method
 

Step 1: Prepare the Mug
  1. Lightly grease a microwave-safe mug with butter or coconut oil to prevent sticking.
Step 2: Mix Dry Ingredients
  1. In the mug, add almond flour, coconut flour, powdered sweetener, baking powder, cinnamon, and salt. Mix well to remove lumps.
Step 3: Add Wet Ingredients
  1. Add the egg, melted butter or coconut oil, almond milk, and vanilla extract. Stir thoroughly until a smooth batter forms.
Step 4: Prepare the Cinnamon Swirl
  1. In a small bowl, mix melted butter, powdered erythritol, and cinnamon until smooth.
Step 5: Create the Swirl
  1. Spoon the cinnamon mixture over the batter and gently swirl it using a toothpick or spoon.
Step 6: Microwave
  1. Microwave on high for 60–90 seconds. Cooking time may vary depending on microwave power. The cake should be set but slightly soft in the center.
Step 7: Add Optional Glaze
  1. Mix glaze ingredients and drizzle over the warm mug cake before serving.
