Method
 

Preheat the oven
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the cauliflower
  1. Wash and dry the cauliflower thoroughly. Cut it into bite-sized florets, keeping sizes consistent for even roasting.
Season the cauliflower
  1. In a large bowl, toss the cauliflower with olive oil, ranch seasoning, garlic powder, onion powder, salt, and black pepper until evenly coated.
Roast the cauliflower
  1. Spread the seasoned cauliflower in a single layer on the baking sheet. Roast for 20–25 minutes, flipping halfway through, until tender and lightly golden.
Prepare the sausage
  1. While the cauliflower roasts, slice the smoked sausage into rounds. In a skillet over medium heat, lightly brown the sausage until edges are caramelized. Set aside.
Make the cheese sauce
  1. In a saucepan over low heat, combine cream cheese and heavy cream. Stir until smooth and creamy. Add shredded cheddar and mozzarella gradually, stirring constantly until melted.
Combine everything
  1. Add roasted cauliflower and sausage to the cheese sauce. Gently stir until everything is evenly coated.
Bake until bubbly
  1. Transfer the mixture to an oven-safe dish. Bake for 10–15 minutes until bubbly and lightly golden on top.
Garnish and rest
  1. Remove from oven and let rest for 5 minutes. Garnish with chopped parsley if desired.
