Preheat the oven
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the cauliflower
- Wash and dry the cauliflower thoroughly. Cut it into bite-sized florets, keeping sizes consistent for even roasting.
Season the cauliflower
- In a large bowl, toss the cauliflower with olive oil, ranch seasoning, garlic powder, onion powder, salt, and black pepper until evenly coated.
Roast the cauliflower
- Spread the seasoned cauliflower in a single layer on the baking sheet. Roast for 20–25 minutes, flipping halfway through, until tender and lightly golden.
Prepare the sausage
- While the cauliflower roasts, slice the smoked sausage into rounds. In a skillet over medium heat, lightly brown the sausage until edges are caramelized. Set aside.
Make the cheese sauce
- In a saucepan over low heat, combine cream cheese and heavy cream. Stir until smooth and creamy. Add shredded cheddar and mozzarella gradually, stirring constantly until melted.
Combine everything
- Add roasted cauliflower and sausage to the cheese sauce. Gently stir until everything is evenly coated.
Bake until bubbly
- Transfer the mixture to an oven-safe dish. Bake for 10–15 minutes until bubbly and lightly golden on top.
Garnish and rest
- Remove from oven and let rest for 5 minutes. Garnish with chopped parsley if desired.
