Method
 

Step 1: Prepare the Cauliflower
  1. If using frozen cauliflower rice, microwave it for 3–4 minutes until soft.
  2. Let it cool slightly, then transfer to a cheesecloth or clean kitchen towel.
  3. Squeeze out as much liquid as possible.
  4. Removing moisture is crucial for crispy bites.
Step 2: Combine Dry Ingredients
  1. In a mixing bowl, combine almond flour, garlic powder, onion powder, paprika, salt, and pepper.
  2. Mix well to ensure even seasoning distribution.
Step 3: Add Cheeses and Cauliflower
  1. Add cauliflower rice to the bowl.
  2. Add shredded cheddar and mozzarella.
  3. Add grated Parmesan if using.
  4. Stir to evenly distribute everything.
Step 4: Add Eggs and Mix
  1. Add two eggs.
  2. Mix thoroughly until the mixture becomes sticky and cohesive.
  3. If the mixture feels too wet, add a tablespoon of almond flour.
  4. If too dry, add a small splash of water or an additional egg white.
Step 5: Shape the Bites
  1. Line a baking sheet with parchment paper.
  2. Scoop small portions of the mixture (about 1 tablespoon each).
  3. Shape them into balls or small patties.
  4. Arrange them evenly on the baking sheet, leaving space between each bite.
Step 6: Bake
  1. Preheat oven to 400°F (200°C).
  2. Bake for 20–25 minutes until golden and crispy on top.
  3. For extra crispiness, broil the bites for 2 minutes at the end.
Step 7: Cool and Serve
  1. Transfer baked bites to a cooling rack for 5 minutes.
  2. This helps air circulate and prevents sogginess.
  3. Serve warm with your choice of dipping sauce.
