Step 1: Prepare the Broccoli
- Preheat your oven to 400°F (200°C).
- Wash and dry the broccoli florets thoroughly.
- Finely chop the broccoli using a sharp knife or pulse briefly in a food processor.
- If the broccoli is very moist, lightly steam it for 1–2 minutes, then pat dry to remove excess moisture.
Step 2: Mix the Ingredients
- In a large mixing bowl, add the chopped broccoli.
- Stir in cheddar cheese, mozzarella cheese, and Parmesan cheese.
- Add eggs, almond flour, garlic, salt, black pepper, paprika, and onion powder.
- Mix until all ingredients are evenly combined and the mixture holds together.
Step 3: Shape the Bites
- Line a baking sheet with parchment paper.
- Scoop about 1½ tablespoons of the mixture and shape into small balls or flattened patties.
- Place them evenly spaced on the baking sheet.
Step 4: Bake
- Bake for 20–25 minutes, flipping halfway through.
- The bites should be golden brown and slightly crispy on the outside.
- For extra crispiness, broil for 1–2 minutes at the end.
Optional Air Fryer Method
- Air fry at 375°F (190°C) for 12–15 minutes, flipping once halfway through.
