Ingredients
  

For the Broccoli Cheese Bites
  • 2 cups broccoli florets finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup almond flour
  • 2 cloves garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp onion powder
Optional Add-Ins
  • ¼ tsp red pepper flakes for heat
  • 1 tbsp chopped fresh parsley
  • 1 tbsp cream cheese for extra creaminess

Method
 

Step 1: Prepare the Broccoli
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the broccoli florets thoroughly.
  3. Finely chop the broccoli using a sharp knife or pulse briefly in a food processor.
  4. If the broccoli is very moist, lightly steam it for 1–2 minutes, then pat dry to remove excess moisture.
Step 2: Mix the Ingredients
  1. In a large mixing bowl, add the chopped broccoli.
  2. Stir in cheddar cheese, mozzarella cheese, and Parmesan cheese.
  3. Add eggs, almond flour, garlic, salt, black pepper, paprika, and onion powder.
  4. Mix until all ingredients are evenly combined and the mixture holds together.
Step 3: Shape the Bites
  1. Line a baking sheet with parchment paper.
  2. Scoop about 1½ tablespoons of the mixture and shape into small balls or flattened patties.
  3. Place them evenly spaced on the baking sheet.
Step 4: Bake
  1. Bake for 20–25 minutes, flipping halfway through.
  2. The bites should be golden brown and slightly crispy on the outside.
  3. For extra crispiness, broil for 1–2 minutes at the end.
Optional Air Fryer Method
  1. Air fry at 375°F (190°C) for 12–15 minutes, flipping once halfway through.
