Ingredients
  

For the Smash Burgers
  • pounds ground beef 80/20 preferred
  • Salt to taste
  • Black pepper to taste
  • 6 slices American cheese or cheddar
For the Big Mac–Style Sauce
  • ½ cup mayonnaise
  • 2 tablespoons sugar-free ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons finely chopped dill pickles
  • 1 teaspoon white vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch of paprika
For Assembly
  • cups shredded iceberg lettuce
  • Dill pickle slices
  • Optional: finely diced onion

Equipment

  • Large cast-iron skillet or flat griddle
  • Sturdy spatula (metal preferred)
  • Parchment paper squares
  • Mixing bowl
  • Spoon or whisk
  • Knife and cutting board
  • Measuring spoons

Method
 

Step 1: Make the Sauce
  1. In a mixing bowl, combine mayonnaise, sugar-free ketchup, mustard, chopped pickles, vinegar, garlic powder, onion powder, and paprika. Whisk until smooth. Cover and refrigerate to allow flavors to meld.
Step 2: Prepare the Beef
  1. Divide the ground beef into 6 equal portions and gently roll into loose balls. Do not overwork the meat.
Step 3: Heat the Skillet
  1. Heat a cast-iron skillet or griddle over high heat until very hot. Lightly grease if needed.
Step 4: Smash the Patties
  1. Place a beef ball onto the hot surface. Cover with parchment paper and smash firmly with a spatula until very thin. Season with salt and pepper. Repeat with remaining beef.
Step 5: Cook and Flip
  1. Cook for 1–2 minutes until crispy and browned. Flip and immediately place a slice of cheese on each patty. Cook another 30–60 seconds until cheese melts.
Step 6: Assemble Taco-Style
  1. Remove patties from heat. Add shredded lettuce, pickle slices, and sauce to one side of each patty. Fold gently in half to form a taco-style smash burger.
