Step 1: Prepare the Coconut Filling
- In a mixing bowl, combine shredded coconut, coconut cream, powdered sweetener, vanilla extract, coconut oil, and salt.
- Mix thoroughly with a spatula until all ingredients are fully incorporated.
- The mixture should stick together when pressed. If it seems too dry, add 1–2 teaspoons of extra coconut cream.
Step 2: Shape the Bites
- Scoop out a tablespoon-sized portion of the mixture.
- Press a whole almond into the center.
- Shape into a ball or small bar with your hands.
- Place each shaped bite onto a parchment-lined tray.
- Repeat until all mixture is used.
Step 3: Freeze the Bites
- Place the tray in the freezer for 20–30 minutes.
- This allows the bites to firm up and makes dipping them in chocolate much easier.
Step 4: Melt the Chocolate
- Add sugar-free chocolate chips and coconut oil to a microwave-safe bowl.
- Microwave in 20–30 second intervals, stirring after each interval, until smooth and fully melted.
- Alternatively, use a double boiler for gentle melting.
Step 5: Coat the Bites in Chocolate
- Remove the chilled coconut bites from the freezer.
- Dip each bite into the melted chocolate using a fork or dipping tool.
- Allow excess chocolate to drip off before placing the bite back onto parchment paper.
- Repeat with all bites.
- Optional:
- Sprinkle extra shredded coconut on top before the chocolate sets.
Step 6: Chill Again
- Return the chocolate-coated bites to the freezer for 10–15 minutes to set the chocolate completely.
- Once hardened, transfer to an airtight container.
