Ingredients
  

For the Coconut Filling
  • 2 cups unsweetened shredded coconut
  • ½ cup coconut cream or thick canned coconut milk
  • ¼ cup powdered erythritol or monk fruit sweetener
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil
  • Pinch of salt
For the Chocolate Coating
  • 1 cup sugar-free chocolate chips
  • 1 tablespoon coconut oil
Add-ins and Garnish
  • Whole almonds 1 per bite
  • Extra shredded coconut for sprinkling optional

Method
 

Step 1: Prepare the Coconut Filling
  1. In a mixing bowl, combine shredded coconut, coconut cream, powdered sweetener, vanilla extract, coconut oil, and salt.
  2. Mix thoroughly with a spatula until all ingredients are fully incorporated.
  3. The mixture should stick together when pressed. If it seems too dry, add 1–2 teaspoons of extra coconut cream.
Step 2: Shape the Bites
  1. Scoop out a tablespoon-sized portion of the mixture.
  2. Press a whole almond into the center.
  3. Shape into a ball or small bar with your hands.
  4. Place each shaped bite onto a parchment-lined tray.
  5. Repeat until all mixture is used.
Step 3: Freeze the Bites
  1. Place the tray in the freezer for 20–30 minutes.
  2. This allows the bites to firm up and makes dipping them in chocolate much easier.
Step 4: Melt the Chocolate
  1. Add sugar-free chocolate chips and coconut oil to a microwave-safe bowl.
  2. Microwave in 20–30 second intervals, stirring after each interval, until smooth and fully melted.
  3. Alternatively, use a double boiler for gentle melting.
Step 5: Coat the Bites in Chocolate
  1. Remove the chilled coconut bites from the freezer.
  2. Dip each bite into the melted chocolate using a fork or dipping tool.
  3. Allow excess chocolate to drip off before placing the bite back onto parchment paper.
  4. Repeat with all bites.
  5. Optional:
  6. Sprinkle extra shredded coconut on top before the chocolate sets.
Step 6: Chill Again
  1. Return the chocolate-coated bites to the freezer for 10–15 minutes to set the chocolate completely.
  2. Once hardened, transfer to an airtight container.
