Ingredients
  

For the Chicken
  • 2 large chicken breasts or 3–4 small
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
For the Sweet Potatoes
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon paprika optional
For the Honey Garlic Sauce
  • 3 tablespoons honey
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon lemon juice optional but recommended
  • ½ teaspoon chili flakes optional
Optional Garnishes
  • Chopped parsley
  • Sesame seeds
  • Fresh herbs

Equipment

  • Large frying pan or skillet
  • Mixing bowl
  • Knife & cutting board
  • Spatula or tongs
  • Baking tray (if roasting potatoes)

Method
 

Step 1: Prepare the Sweet Potatoes
  1. Wash and peel sweet potatoes (optional).
  2. Cut into evenly sized cubes.
  3. Toss with olive oil, salt, and paprika.
Cooking options:
  1. Roast at 200°C (400°F) for 20–25 minutes
  2. OR sauté in skillet for 10–12 minutes
  3. Potatoes should be tender with lightly crisp edges.
Step 2: Prepare the Chicken
  1. Season chicken with salt and pepper.
  2. Heat skillet with olive oil.
  3. Cook chicken over medium heat for 5–7 minutes per side.
  4. Chicken should be golden outside and fully cooked inside (75°C / 165°F).
  5. Remove and rest briefly before slicing.
Step 3: Make the Honey Garlic Sauce
  1. In the same pan:
  2. Lower heat.
  3. Add minced garlic and sauté briefly (30–60 seconds).
  4. Add honey, soy sauce, lemon juice, chili flakes.
  5. Stir until combined and slightly thickened.
  6. Avoid high heat to prevent burning.
Step 4: Combine Everything
  1. Return chicken to pan or drizzle sauce over sliced pieces.
  2. Add sweet potatoes.
  3. Toss gently to coat.
  4. Cook briefly to meld flavors.
Step 5: Garnish and Rest
  1. Sprinkle herbs or seeds. Allow dish to rest 2–3 minutes.
