Ingredients
  

  • 2 cups thick Greek yogurt plain or vanilla
  • 2 –4 tablespoons honey or maple syrup adjust to taste
  • ½ teaspoon vanilla extract optional
  • ½ cup fresh fruit strawberries, raspberries, blueberries, etc.
  • ¼ cup yogurt covered craisins optional
  • ¼ cup granola or chopped nuts optional
  • 2 tablespoons mini chocolate chips optional

  • Spoon or spatula
  • Small baking tray or dish
  • Parchment paper
  • Knife (for slicing bars)
  • Freezer

Method
 

Step 1: Prepare the Base
  1. In a mixing bowl, combine:
  2. Greek yogurt
  3. Honey or maple syrup
  4. Vanilla extract (if using)
  5. Stir thoroughly until the mixture is smooth and uniform. Taste and adjust sweetness as needed.
Step 2: Line the Tray
  1. Place parchment paper on your tray or dish. This prevents sticking and makes removal easy.
Step 3: Spread the Yogurt
  1. Pour the yogurt mixture onto the tray. Use a spoon or spatula to spread it evenly.
  2. Aim for roughly ½ to 1 cm thickness. Thinner layers freeze faster and resemble Greek yogurt bark, while slightly thicker layers create softer bars.
Step 4: Add Toppings
  1. Scatter fruit evenly across the surface. Add craisins, nuts, granola, and chocolate chips if desired.
  2. Gently press toppings into the yogurt so they adhere during freezing.
Step 5: Freeze
  1. Place the tray flat in the freezer. Freeze for 2–3 hours, or until completely firm.
Step 6: Slice into Bars
  1. Remove from freezer. Lift using parchment paper. Allow to rest for 2–3 minutes to soften slightly.
  2. Use a knife to cut into bars or squares.
