Step 1: Optional Searing
- Heat olive oil in a skillet over medium heat.
- Lightly sear chicken breasts for 1–2 minutes per side until lightly golden. This step enhances flavor but can be skipped.
- Transfer chicken to crockpot.
Step 2: Season Chicken
- Sprinkle salt, pepper, paprika, oregano, thyme, and chili flakes over chicken.
- Ensure even coating.
Step 3: Add Aromatics & Tomatoes
- Add minced garlic and sun-dried tomatoes into crockpot.
- Distribute evenly.
Step 4: Add Liquids
- Pour chicken broth around the chicken.
- Add heavy cream.
Step 5: Slow Cook
- Cover and cook:
- LOW for 4–5 hours (recommended)
- HIGH for 2.5–3 hours
- Chicken should become tender but not dry.
Step 6: Add Cheese
- Near the end of cooking, stir in parmesan cheese and cream cheese (if using).
- Allow to melt fully.
Step 7: Adjust Sauce
- If sauce is thin, cook uncovered for 15–20 minutes.
