Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 3 bell peppers red, yellow, and green, sliced
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 1 14.5 oz can diced tomatoes (with juices)
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • Juice of 1 lime
For serving (optional):
  • Cooked rice cilantro-lime rice, or quinoa
  • Black beans or pinto beans
  • Corn kernels
  • Avocado slices or guacamole
  • Sour cream or Greek yogurt
  • Shredded cheese
  • Fresh cilantro
  • Lime wedges

Equipment

  • Slow cooker / crockpot (6-quart recommended)
  • Cutting board
  • Sharp knife

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the bottom of the crockpot in a single layer.
Add Vegetables
  1. Layer the sliced bell peppers and onions evenly over the chicken.
Mix the Seasoning
  1. In a small bowl, combine chili powder, cumin, smoked paprika, oregano, onion powder, garlic powder, salt, and black pepper.
Season the Dish
  1. Sprinkle the spice mixture evenly over the chicken and vegetables. Add the minced garlic on top.
Add Liquids
  1. Pour the diced tomatoes (with their juices) over everything. Drizzle with olive oil.
Slow Cook
  1. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.
Shred the Chicken
  1. Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot and stir to coat with the juices.
Finish with Lime
  1. Add fresh lime juice, stir well, and let the mixture sit for 5–10 minutes before serving.
