  • Cooked chicken breast
  • Cottage cheese
  • Celery
  • Red onion
  • Dried cranberries optional
  • Dijon mustard

Method
 

  1. If not already prepared, cook the chicken breast until fully done and tender. Allow it to cool slightly.
  2. Shred the chicken finely using two forks or your hands. Set aside.
  3. In a large mixing bowl, add cottage cheese. For a smoother texture, mash with a fork or blend briefly before adding other ingredients.
  4. Add shredded chicken to the bowl with the cottage cheese.
  5. Stir in diced celery, chopped red onion, and dried cranberries if using.
  6. Add Dijon mustard, lemon juice, garlic powder, black pepper, and a light pinch of salt.
  7. Mix thoroughly until all ingredients are evenly combined and creamy.
  8. Taste and adjust seasoning as needed. Add olive oil if desired for extra richness.
  9. Fold in fresh herbs just before serving or storing.
  10. Chill for 10–15 minutes for best flavor, or serve immediately.
