Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.
Step 2: Prepare the Chicken
- If not already cooked, boil or bake the chicken until fully cooked. Let it cool slightly, then shred using two forks. Place shredded chicken into a large mixing bowl.
Step 3: Make the Buffalo Cream Sauce
- In a saucepan over medium heat, add butter, cream cheese, and heavy cream. Whisk continuously until smooth and creamy. Stir in buffalo sauce, ranch or blue cheese dressing, garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 4: Combine Ingredients
- Pour the buffalo cream sauce over the shredded chicken. Mix until all pieces are evenly coated.
Step 5: Assemble the Casserole
- Transfer the chicken mixture into the prepared baking dish. Spread evenly using a spatula. Sprinkle cheddar and mozzarella cheese evenly over the top.
Step 6: Bake
- Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 15–20 minutes until bubbly and golden on top.
Step 7: Rest and Garnish
- Remove from oven and let rest for 5–10 minutes. Garnish with green onions, parsley, or blue cheese if desired.
