Ingredients
  

  • 10 large eggs
  • 1 cup whole milk or heavy cream for richer texture
  • cups shredded cheese cheddar, mozzarella, or a blend
  • 1 lb breakfast sausage pork, turkey, or chicken
  • 1 medium onion finely diced
  • 1 bell pepper diced
  • 2 cups frozen or fresh hash browns
  • 2 cloves garlic minced
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano or Italian seasoning

Method
 

Preheat the Oven
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with butter or oil.
Cook the Sausage
  1. Heat a skillet over medium heat. Add sausage and cook until browned and fully cooked, breaking it into crumbles. Remove excess grease if necessary and set aside.
Sauté the Vegetables
  1. In the same skillet, add olive oil or butter. Sauté onion and bell pepper until softened, about 4–5 minutes. Add garlic and cook for 30 seconds.
Prepare the Egg Mixture
  1. In a large bowl, whisk together eggs, milk, salt, pepper, paprika, and oregano until well combined.
Assemble the Bake
  1. Spread hash browns evenly across the bottom of the baking dish. Layer cooked sausage, sautéed vegetables, and half of the cheese on top.
Add Eggs and Cheese
  1. Pour the egg mixture evenly over the layers. Sprinkle remaining cheese on top.
Bake
  1. Bake uncovered for 40–45 minutes, or until the center is set and the top is golden.
Rest and Slice
  1. Let the egg bake rest for 10 minutes before slicing. This helps it set and makes serving easier.
