Ingredients

  • 2 cups cooked chicken breast diced or shredded
  • 1 large ripe avocado cubed
  • 4 –5 strips bacon cooked and chopped
  • ¼ cup mayonnaise
  • 1 tablespoon sour cream optional
  • 1 teaspoon mustard optional
  • 1 tablespoon lemon juice
  • 2 tablespoons green onions sliced
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon garlic powder optional
  • ½ teaspoon paprika optional

Equipment

  • Mixing bowl
  • Cutting board
  • Sharp knife
  • Frying pan (for bacon if not pre-cooked)
  • Paper towels
  • Spoon or spatula
  • Measuring spoons

Method

Step 1: Prepare the Chicken
  1. Ensure your chicken is fully cooked and cooled. Dice into bite-sized pieces or shred depending on your preference. Uniform pieces improve texture and presentation.
Step 2: Cook the Bacon
  1. In a frying pan over medium heat, cook bacon until crispy. Transfer to paper towels to drain excess grease. Once cooled, chop into small pieces. Crisp bacon ensures the salad has satisfying contrast.
Step 3: Prepare the Avocado
  1. Cut the avocado in half, remove the pit, and gently scoop out the flesh. Cube into medium-sized chunks. Avoid overly small pieces, which can turn mushy when mixed.
Step 4: Make the Dressing
  1. In a small bowl, combine mayonnaise, sour cream (if using), mustard (if using), lemon juice, salt, pepper, and optional spices. Stir until smooth and creamy.
Step 5: Combine Ingredients
  1. In a large mixing bowl, add chicken, bacon, avocado, and green onions. Pour the dressing over the mixture.
Step 6: Mix Gently
  1. Fold ingredients carefully using a spoon or spatula. Avoid aggressive stirring to preserve the avocado’s shape.
Step 7: Taste and Adjust
  1. Check seasoning and adjust salt, pepper, or lemon juice as needed.
Step 8: Chill (Optional)
  1. For best flavor, refrigerate for 15–30 minutes before serving. This allows flavors to meld.
