2 tbsp. coconut flour
Two tbsp. Erythritol
2 cups of mozzarella cheese

Equipment

  • 1 Rolling Pin
  • 1 Parchment paper
  • 1 Hand mixer
  • 1 Spatula
  • 1 Baking sheet

Method

We heat the oven at 375 degrees F.
Apply the parchment on the tray.
We melt the cream cheese & mozzarella in a dish for forty-five seconds and stir till it gets smooth.
Mix the baking powder, coconut flour, Erythritol, & almond flour in a separate dish.
Then mix the dry ingredients with the melted cheese mixture after adding the eggs to make the soft dough.
Roll the dough in rectangle with help of parchment paper.
Beat the Erythritol, vanilla essence & soft cream cheese till it gets smooth to prepare filing.
Roll the dough gently into a log and sprinkle with blueberries. Cut into eight rolls.
Place the rolls on it and bake them for 18-20 minutes till the rolls get brown.
Combine heavy cream, Erythritol, and cream cheese to make the glaze.
Add the glaze on the cool Keto Blueberry Cheesecake Rolls & serve.

                        INGREDIENT NOTES:

                        ALMOND FLOUR:
Provides a low-carb, soft base for the rolls with a mild, nutty flavor. Fine almond flour gives a smooth texture and mimics traditional dough.

                        COCONUT FLOUR:
Balances the richness of the cheese and helps absorb moisture, keeping the dough firm but not dry. Adds a subtle sweetness.

                        ERYTHRITOL POWDER:
Sweetens without extra carbs, blends smoothly into both the filling and glaze, and leaves no aftertaste.

                        BAKING POWDER:
Helps the rolls rise and stay light. Use fresh baking powder for best results.

                        EGGS:
Bind the dough together, add moisture, and help it rise. Room-temperature eggs mix more evenly with other ingredients.

                        MOZZARELLA CHEESE:
Forms the base of the fathead dough. Melts to create a soft, chewy texture reminiscent of traditional bread.

                        CREAM CHEESE:
Adds richness and smoothness to both the dough and filling. Full-fat cream cheese works best for texture.

                        VANILLA ESSENCE:
Enhances the flavor of the filling and glaze, giving depth and warmth to the cream cheese mixture.

                        BLUEBERRIES:
Provide natural sweetness, vibrant color, and a fresh contrast to the creamy filling. Fresh berries maintain their shape best.

                        HEAVY CREAM:
Used in the glaze for a smooth, rich finish that drizzles easily over the baked rolls.
