These Keto Air Fryer Rock Buns are a delicious low-carb version of the classic British tea-time treat. They deliver the same nostalgic flavor, with a soft and tender inside and a lightly crisp, rustic top. By using almond flour and coconut flour, you get perfectly fluffy buns without the carbs.

They cook evenly in the air fryer in just 22 minutes, making them a quick and satisfying option. Their name comes from their slightly rugged, “rock-like” appearance on top. Add-ins like sugar-free chocolate chips, slivered almonds, or coconut flakes give them extra texture and a hint of sweetness.

Enjoy these Keto Air Fryer Rock Buns as a breakfast treat, an afternoon snack, or even a guilt-free dessert.

Ingredients

1/3 cup Erythritol granules
1 & Half tsp. baking powder
Two cups almond flour
½ tsp. cinnamon
1/8 tsp. salt
Quarter cup keto chocolate chips
Two large eggs
¼ cup melted butter
1 tsp. vanilla extract
Quarter cup keto coconut flakes

Equipment

  • 1 Mixing dish
  • 1 Air fryer
  • 1 Parchment paper
  • 1 Spatula

Method

Apply the parchment paper to the dish.
    We heat the air-fryer to 320° F.
Take a large vessel & mix the cinnamon, Almond flour, Erythritol, salt, & baking powder in it.
Then we whisk the vanilla extract, eggs, & melted butter in a separate dish.
Then we mix both of these components to form the thick dough.
Include the chocolate chips, coconut flakes, or nuts in the dough and fold so they get mixed.
Scoop out the round mounds from the dough and put them in the basket.
Fry them for 10-12 minutes till the top parts get brown.
Cool for five minutes & serve.

                    INGREDIENT NOTES

                    Almond Flour:
Almond flour keeps these buns low in carbs while giving them a light, tender texture and a mild nutty flavor. It mimics regular flour without heaviness. Always use fine almond flour—not almond meal—for the best smooth finish.

                    Erythritol Powder:
Erythritol adds sweetness without affecting blood sugar levels. It blends well with the dry ingredients and keeps the overall flavor balanced.

                    Baking Powder:
This helps the buns rise properly in the air fryer, creating a soft and airy texture instead of a dense one.

                    Cinnamon Powder:
Cinnamon brings a warm, cozy aroma and subtle spice. It pairs perfectly with the buttery flavor and almond flour, adding depth without overpowering sweetness.

                    Salt:
Salt enhances every flavor in the recipe and balances the sweetness. Even a small amount brings out the buttery notes and overall richness.

                    Eggs:
Eggs add structure, moisture, and fluffiness. They help bind the dough and give the buns their soft interior.

                    Butter:
Butter adds richness, moisture, and a classic baked flavor. It ensures the inside stays tender and soft.

                    Vanilla Essence:
Vanilla adds aroma and a sweet, dessert-like flavor. It complements almond flour and enhances the taste of erythritol.

                    Keto Coconut Flakes:
These unsweetened flakes give a light tropical flavor and a pleasant crunch. They toast beautifully in the air fryer. Make sure they are sugar-free to keep the recipe keto-friendly.

                    Add-Ins (Optional):
Chopped nuts or sugar-free chocolate chips give extra texture and flavor. They soften slightly as they cook, creating crunchy bits or melty, sweet pockets. You can also replace them with keto-friendly dried fruit for a more classic rock bun feel.
