Keto Kahlua & Baileys Pudding Shots

INGREDIENT NOTES

Erythritol:
A keto-friendly sweetener that dissolves smoothly. You can also use monk fruit or stevia as alternative low-carb options.

Baileys:
Choose a low-carb Irish cream or keto-friendly Baileys to maintain a creamy flavor without added sugar.

Gelatin:
Essential for helping the pudding set into firm shots. Bloom the gelatin in cold water first to ensure it dissolves completely.

Heavy Cream:
Adds richness and a creamy texture while keeping the carb count low. Use high-fat cream for an even smoother consistency.

Cocoa Powder:
Unsweetened cocoa provides a deep, rich chocolate flavor without extra carbs.

Vanilla Extract:
Enhances the chocolate and liqueur flavors for a balanced finish.

Almond Milk:
Unsweetened almond milk helps keep the recipe low-carb without altering the flavor. You can swap it with coconut milk for a slightly different taste.

Kahlua:
Use unsweetened or low-carb Kahlua to keep the recipe keto-friendly while adding that classic liqueur note.

TIPS

  • For an extra creamy texture, replace almond milk with high-fat coconut cream.
  • Ensure the gelatin is fully dissolved to avoid lumps.
  • Add toppings like crushed nuts, sugar-free chocolate curls, or cocoa powder for more flavor.
  • These pudding shots can be prepared ahead of time—just keep them chilled until serving.

STORAGE INFORMATION

Refrigeration:
Store in an airtight container for up to 5 days. Keep chilled until serving.

Freezing:
Freezing is not recommended, as the gelatin can cause the texture to break.
